I want to make sure my clients remember that although cooking is an art form, it's important that it is also fun and stress free! I teach my students to approach cooking with creativity and passion, and to take pride in their work, but to be okay with all of the mistakes that happen too. Cooking should be enjoyable as well as challenging, and I strive to make my instruction both fun and educational.
I've taught clients in my own home but I prefer to meet you right where you do the majority of your cooking, in your own home. Being comfortable in your kitchen is my goal. If you don't enjoy being in your own kitchen to cook, let me help you fix that too!
In starting my own business, I am pledging 5% of all profits from BK's Personal Culinary Training to a cause very close to my heart - The National Fallen Firefighters Foundation. If you feel inspired to make a donation on your own, please visit ( www.firehero.org ). Thank you so much.
Chef Brian began his culinary career after finding at a young age that he enjoyed the creativity and comradery of working in a restaurant kitchen. He decided to take it all the way by enrolling in the Culinary Institute of America (C.I.A) in Hyde Park, New York – not far from where he grew up in Queens, New York. He was an exceptional student and once completing his externship at The Inn at Spanish Bay in Pebble Beach, California, he graduated and immediately launched his culinary career. He started with the The Buckhead Life Restaurant Group in Atlanta, GA working under Chef's like Kevin Rathbun and John Caver. He climbed his way up the culinary ladder for the next 8 years. Although he had found professional success in Atlanta, tragedy struck when his best friend, a fireman in New York, passed away on 9/11. It was a difficult time for Brian and those close to him, so he decided that it was time for a change of scenery to help him recover from the loss.
Chef Brian was recruited to open up the new Eddie V’s Prime Seafood restaurant as their new Executive Chef in Scottsdale, Arizona. He then moved with that same company to Austin, TX where he opened the award-winning Roaring Fork restaurant in downtown Austin in the historic Stephen F. Austin Hotel. He spent his first four years in Austin winning awards and accolades such as Best New Chef in Austin, Best New Restaurant, Rising Star Chef and others. He had features in multiple magazines, like Austin Monthly, as well as radio and television spots, and cooked at some of the most upscale events, fundraisers and galas in Austin.
Brian then spent the following nine years of his career in Austin opening upscale restaurants, heading up the new farm-to-fork culinary program at St. Edward’s University, teaching at the Auguste Escoffier School of Culinary Arts and then finally overseeing the opening of the multi-million-dollar entertainment facility, Top Golf.
After years of working his way up in the Top Golf culinary division, leading their domestic and global site openings as International Corporate Executive Chef, he was ready to take a break from traveling to spend more time at home with his wife and young son. And in a full circle moment, he took a position at his alma mater as Culinary Chef Instructor at the prestigious Culinary Institute of America
(C.I.A) in San Antonio, TX and taught hundreds of students over his 4 years.
He was inspired to return to the restaurant industry when offered the position of Director of Culinary Operations for the famous downtown Boerne, TX bistro, The Dienger Trading Co.. But after a little less than 2 years, he found the regular commute from San Antonio to Boerne to be too much. He knew it was time to go out on his own and to take all of his culinary knowledge, passion and creativity, restaurant experience, and mentorship skills and turn it into his own business.
And that is where the idea of “BK’s Personal Culinary Training” was born.
Chef Brian has the C.I.A. pedigree, the long restaurant career as an Mentor, Executive Chef, and years as a culinary instructor at two different culinary schools, and wants to bring that experience into your kitchen. He wants to pass along his knowledge and passion for the culinary arts to you, who might feel a little intimidated by the craft, or are stuck in a rut and need a personal culinary trainer to help get you to the next step. Just like you would hire a personal trainer to build muscle and get stronger, you can now hire your very own Personal Culinary Trainer to build up your strength in the kitchen! Don’t look any further. Chef Brian can help you grow your kitchen confidence and bring happiness back into your cooking!
